1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

½ tsp salt

¾ cup sugar

2 large eggs

½ cup sour cream or plain yogurt

⅓ cup melted butter

2 tbsp fresh lemon juice

1 tbsp lemon zest (about 1 large lemon)

1 tsp vanilla extract


Optional Lemon Glaze

1 cup powdered sugar2–3 tbsp fresh lemon juice


Instructions

  1. Preheat oven to 350°F and grease a standard loaf pan.

  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.

  3. In another bowl, whisk the sugar and eggs until smooth and slightly fluffy.

  4. Stir in the sour cream, melted butter, lemon juice, lemon zest, and vanilla.

  5. Gently fold the dry ingredients into the wet ingredients until just combined.

  6. Pour the batter into the loaf pan and bake 45–50 minutes, or until a toothpick inserted in the center comes out clean.

  7. Allow the loaf to cool for about 10 minutes before removing from the pan.


For the glaze: Whisk powdered sugar with lemon juice until smooth and drizzle over the cooled loaf.


The result is bright, tender, and wonderfully simple—just the sort of treat that feels perfect on a sunny spring afternoon.

Honey Cakes: Sweet, Simple & Comforting

Ingredients

1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp cinnamon

½ cup honey

¼ cup brown sugar

½ cup melted butter

2 eggs

½ cup buttermilk

1 tsp vanilla extract


Optional Topping

Extra honey for drizzling Powdered sugar for dusting


Instructions

  1. Preheat oven to 350°F and grease a muffin tin or small cake molds.

  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.

  3. In another bowl, whisk honey, brown sugar, and melted butter until smooth.

  4. Add eggs one at a time, mixing well after each addition.

  5. Stir in buttermilk and vanilla.

  6. Fold the dry ingredients into the batter until just combined.

  7. Fill muffin cups about ¾ full.

  8. Bake 15–18 minutes, until lightly golden and springy to the touch.


Allow the cakes to cool slightly before serving. Drizzle with a little warm honey or dust lightly with powdered sugar.


They’re humble, comforting, and just the right amount of sweet.
